M.Polo Mr. Chef - Bigoli

Dear Friends
I know by long time the Bigoli al Torchio (sorry, no available equivalent English link), that now are my preferred fresh Pasta . Consequently, why not to play the role of the Chef together with them. The following are two simple M.Polo Bigoli Recipes . Any comment from your side is welcomed.

M.Polo Vegan Bigoli


Buy the ingredients and the Bigoli (100 gr per person) according to the number of the participants.
Put on the fire a pot with sufficient water and a pan with olive oil. On a cutting board, cut perpendicularly turkish elongated green peppers deprived of the seeds, perpendicularly spring onions, tomatoes and add to the pan. Cover the pan with a lid and let to cook stirring rather frequently. When the water boils, add the bigoli in the pot and let to cook 9-10 min. " al dente ",  12 min "well done". Lower the fire under the pan, add in it garlich, mustard seeds, cumin, black pepper and chilly judiciously. Drain the bigoli when they are cooked, put a sufficient quantity of them in the bowl of each participant and distribute the content of the pad in each bowl. Don't mix and serve without grated Parmesan .
Preparation time: 20 min. Proposed wine: Amarone Acinatico

M.Polo Lamb Bigoli


Buy the ingredients, the lamb meat and the Bigoli (100 gr per person) according to the number of the participants. Put on the fire a pot with sufficient water and a pan with olive oil. On a cutting board, cut perpendicularly turkish elongated green peppers deprived of the seeds, perpendicularly spring onions and add to the pan. Cover the pan with a lid and let to cook stirring rather frequently. When the water boils, add the bigoli in the pot and let to cook 8-9 min. " al dente ",  12 min "well done". Lower the fire under the pan, add in it the lamb meat, olives deprived of the seeds, garlich, mustard seeds, cumin, black pepper and chilly judiciously. Drain the bigoli when they are cooked, put a sufficient quantity of them in the bowl of each participant and distribute the content of the pad in each bowl. Don't mix and serve without grated Parmesan .
