M.Polo Lamb Tajine

M-Polo lamb tajine represents an evolution of the marrocain lamb tajine I eaten with pleasure in various  cities  in Morocco and the continuation of the play of M.Polo Mr. Chef started with bruscheta and omelette  and continued with the bigoli al torchio . In the preparation of M.Polo lamb tajine don't worry if you don't have a ceramic tajine pot , a  frying pan with a cover are sufficient.

In a tajine pot add olive oil, sliced spring onions, tomatoes, green pepperoni, garlich  in a quantity sufficient for the number of participants. Add powder of morrocain cumin, safran, cardamom, pepper, mustard seeds and chili judiciously. Cover the tajine and let cook 12-15 min, moderate flame mixing and turning every 2-3 min. Add sliced palm dates and olives both without seeds, sliced figs, raisins, chopped walnuts, pine nuts, nuts, almonds and pistachios. Cover the tajine pot and let cook 5-6 min mixing and turning every 2-3 min. Add lamb fillet cut in small cubes in a quantity sufficient for the number of participants. Cover the tajine pot and let cook 5-6 min mixing and turning every 2-3 min. Serve in terracotta bowls and eat with a spoon.
Preparation time: 25-30 min. Proposed wine: Boulaouane Red  or Calcarole Amarone
