in the past, the thema Bigoli was well dealt with on this blog because of the easy and rapid M.Polo recipes. Therefore, I was delight to meet, after the Maya in Verona, the Confraternita dei Bigoi al Torcio from Limena (Veneto - IT). For the first time I saw the mitic torcio (Engl.: torcer ?) for their prepation, not to be confused with the Torcolo o Torchio for pressing grapes, and to hear about new Bigoi recipes.
